Oven Roasted Veggies #1
I call this recipe Oven Baked Veggies, because that is exactly what it is. Also, it’s called #1 because it’s my favorite go-to dish and I always throw in different kinds of veggies. So you will find lots of variations on the blog as we go along. I always make a tray of oven baked veggies to go with baked potato.
You will need
1 sweet potato
1 red bell pepper
2 cloves of garlic
large handful of cherry tomatoes
2 stems of rosemary
salt, pepper, olive oil, cayenne pepper
500 grams potatoes
olive oil, salt, pepper
Start with rinsing the potatoes and slicing them into cubes or fries, whatever you prefer. Boil them for about 2-5 minutes, then drain them. Spread them out on a baking tray, sprinkle on some olive oil, salt and pepper, and put them aside.
Cut all the veggies in the shape you like. I cut the courgettes in half moon shapes, the sweet potato in medium sized cubes, the bell pepper in strips of 1 centimeter wide, and I sliced the tomatoes in half. I like throwing in big chunks of onion and two whole smashed garlic cloves. Put it all together in a baking tray, sprinkle with olive oil, salt, pepper, a bit of cayenne pepper and fresh rosemary, and stir.
Put the potatoes and the baking tray in the oven, at about 210C, and bake for 30-40 minutes, until the potatoes are nice and crispy, and the veggies too. You can stir the veggies around midway the baking time.
Add everything together on your plate, add mayonaise or ketchup, whatever, and enjoy!
