Sweet Potato Sheetcake

So I had some puff pastry sheets left from the last sheetcake I made. I also had a sweet potato laying around, and felt like adding courgette, goats cheese and off course ONIONZ. So that’s what I did and it turned out quite nice! This feeds two hungry people.

You will need

1 sweet potato
1/2 courgette
1 red onion
2 cloves of garlic
2-3 tablespoons of tomato sauce
Sprinkle of soft goats cheese
1 stem of fresh rosemary
Salt, pepper, sprinkle of olive oil

Start with heating up your oven to about 220C (check your brand of puff pastry too!).

Line a baking tray with paper and lay the puff pastry sheets in any shape you like. I made a square (2×2)

Peel the sweet potato and slice into thin circles of about half a centimeter, and do the same with the courgette. Spread the tomato sauce out on the sheets. Put the veggies on there row by row, in a way that the slices overlap slightly. Cut the onions in rings, cut the garlic in thin slices and spread them onto the veggies.

Sprinkle on the goats cheese and the fresh rosemary, then sprinkle on some olive oil. Salt and pepper to taste. Put into the oven for 30-40 minutes until the crust is nice and brown and the veggies look done. Cut the cake and enjoy!
